Ingredients

  • 6 aubergines
  • 4 sweet peppers
  • 2 carrots
  • 5 bulbs
  • 1 kg of tomatoes
  • 1 head of garlic
  • 1 bunch of parsley
  • 1 bunch of cilantro
  • 3-4 sprigs of purple basil
  • 1/2 teaspoon ground parsley, uccio-suneli and Imeretian saffron
  • vegetable oil
  • Salt, freshly ground black pepper

Cooking

  1. Eggplant must be cut into cubes, fill them with salt and pour cold water. After 1 hour, drain the water and squeeze out excess moisture.
  2. Heat the frying pan and fry the eggplant in oil until cooked. Lay the eggplants on paper towels.
  3. Cut onions into small cubes, sweet peppers -Stripes, and carrots of sodium on a large grater. In the same frying pan in butter, chopped onions until golden brown for 10 minutes. Add carrot and pepper and continue to fry all over low heat, stirring occasionally, about 10 minutes.
  4. Scald the tomatoes with boiling water, and then dip them into cold water to make it easier to peel. Chop the tomatoes.
  5. Garlic and cilantro cut and put them in a mortar, salting and pounding until the formation of gruel. The resulting mixture is added to the wiped tomatoes and mixed.
  6. All the fried vegetables mix and pour the tomato mixture, then put on a small fire. Finely chop basil and parsley and pour into a saucepan. Salt, pepper and add spices.
  7. This dish is still about 10 minutes. Turn off the fire and cool for about half an hour.
