Ajapsandali in Georgian

Ajapsandali is one of the most famous and delicious dishes Georgian cuisine. This snack can be served both cold and hot, not forgetting the pita bread and fresh greens.

But in the process of preparing this simple dish, there is one small nuance - all vegetables should be brought to full readiness during pre-roasting.

And the degree of their roasting should be the same. Be sure to fry the pepper until soft, because if it remains crunchy and elastic, it will not fit into the overall soft and delicate consistency of the dish.

It also applies to eggplants - they must be fully prepared.
